Palm Sugar Rich Milk Ice Cream (3kg)

Imported dairy. Cream at 38% milk fat.

Slow-cooked with organic Cambodian palm sugar, then chilled

overnight to age and emulsify. The result is dense and smooth —

it melts on contact, the milk comes through clearly, and a faint

palm blossom note follows at the end.

The sugar comes from Kampong Speu, Cambodia, tapped from the

blossom of twenty-year-old palm trees. Unrefined. It sweetens

slowly and with more depth than cane sugar, so it lifts the dairy

instead of covering it.
