Cocoa Sandwich Cookie

A crisp cookie made with French cocoa powder, sandwiching a layer of
caramel slow-cooked from palm sugar, finished with a pinch of fleur de sel.

The caramel is made with palm blossom sugar. No cane sugar — only
unrefined blossom sugar, which sweetens slowly and finishes with
caramel and a faint floral note. Cooked down, the filling turns dark,
and the salt brings the sweetness forward. Let it come to room
temperature and the filling softens and pulls into threads.
