Description

The mix we use in our own kitchen

People often finish our pancakes and ask what we put in them. Nothing unusual. The difference is the sugar.

The sugar: organic Cambodian palm sugar

Harvested in Kampong Speu, Cambodia, from palm trees around twenty years old. What we collect is the nectar of the flower, not the fruit. Ten litres of nectar yields one kilogram of sugar. Certified organic by France's AB standard since 2005.

No refined white sugar. Unrefined, so the minerals stay in. It finishes with caramel and a hint of blossom, and it knows when to stop, so it never buries the flour.

The grain: German rye flour

Most pancake mixes use wheat alone. Sweet, but with no floor under it. We blend Japanese wheat flour with German rye, which brings depth and a faint sourness for the sweetness to stand on. Whole milk powder is already in the mix, so you don't need cream at home.

How to make it

200g mix

2 eggs

170g milk

50g melted unsalted butter

Stir until smooth and rest for 10 minutes. Preheat your waffle or pancake iron, pour about half a cup, and cook for 3 minutes.

One pack makes 5 pancakes.
